Club Sandwich Pasta Salad

A delicious pasta salad inspired by the flavors of a classic club sandwich, perfect for picnics or potlucks.

For the Crust:

  • 8 oz rotini pasta
  • 1 cup cooked chicken, diced
  • 6 slices bacon, cooked and crumbled
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tbsp Dijon mustard
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup shredded cheddar cheese
  • 2 tbsp fresh parsley, chopped

Instructions

1. Prepare the Crust:

  1. Cook pasta according to package directions. Drain and rinse with cold water.
  2. In a large bowl, combine mayonnaise, sour cream, Dijon mustard, garlic powder, salt, and pepper to make the dressing.
  3. Add cooled pasta, chicken, bacon, tomatoes, cucumber, and red onion to the bowl. Toss to coat evenly with dressing.
  4. Stir in shredded cheddar cheese and fresh parsley.
  5. Cover and refrigerate for at least 1 hour before serving to allow flavors to meld.
