For the Crust:
- 4 cups cubed French bread
- 4 large eggs
- 1 cup milk
- 2 tbsp granulated sugar
- 1 tsp vanilla extract
- 1 tbsp lemon zest
- 1 tsp ground cinnamon
- 1/4 tsp salt
- 2 tbsp melted butter
- 1/4 cup brown sugar
- 1/2 tsp cinnamon (for topping)
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and grease a muffin tin.
- In a large bowl, whisk together eggs, milk, granulated sugar, vanilla, lemon zest, cinnamon, and salt.
- Add cubed French bread to the egg mixture and gently stir until all bread is coated. Let sit for 10 minutes.
- Divide the soaked bread mixture evenly among the muffin cups, pressing down slightly.
- Bake for 20-25 minutes or until golden brown.
- While muffins bake, mix brown sugar and cinnamon for the topping.
- Remove muffins from oven, brush with melted butter, and sprinkle with cinnamon sugar mixture.
- Serve warm.
