For the Crust:

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 cup buttermilk
  • 1 cup strong black coffee (cooled)
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 tsp vanilla extract
  • 3 cups heavy cream
  • 1/2 cup powdered sugar
  • 8 oz cream cheese (softened)
  • 1/2 cup semisweet chocolate chips (melted)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  3. Add buttermilk, coffee, oil, eggs, and 1 tsp vanilla. Mix until smooth. Divide batter evenly among pans.
  4. Bake for 25-30 minutes or until a toothpick comes out clean. Cool completely.
  5. Beat heavy cream, powdered sugar, and remaining vanilla until stiff peaks form. Fold in softened cream cheese.
  6. Assemble cake by layering chocolate cake with cream filling. Drizzle melted chocolate over the top layer.
