Chocolate Mousse Cheesecake

A decadent dessert combining the rich creaminess of cheesecake with the light, airy texture of chocolate mousse.

For the Crust:

  • 1 1/2 cups chocolate cookie crumbs
  • 1/4 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup heavy cream
  • 1 tsp vanilla extract
  • 1 cup semi-sweet chocolate, melted and cooled
  • 3 large eggs
  • 1/4 cup cocoa powder
  • Pinch of salt

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F (165°C). Combine cookie crumbs and melted butter, press into bottom of 9-inch springform pan.
  2. Beat cream cheese and sugar until smooth. Add heavy cream and vanilla, mix until combined.
  3. Blend in melted chocolate, then eggs one at a time. Fold in cocoa powder and salt.
  4. Pour filling over crust. Bake for 45-50 minutes until edges are set but center still jiggles slightly.
  5. Turn off oven, leave cheesecake in oven with door slightly open for 1 hour. Refrigerate at least 4 hours before serving.
