Chicken Scampi with Garlic Parmesan Rice

A flavorful and creamy dish featuring tender chicken and garlic parmesan rice.

For the Crust:

  • 2 boneless, skinless chicken breasts
  • 2 cups cooked white rice
  • 3 cloves garlic, minced
  • 1/2 cup grated parmesan cheese
  • 1/4 cup butter
  • 1/4 cup heavy cream
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

1. Prepare the Crust:

  1. Season chicken breasts with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a skillet over medium heat. Cook chicken until golden and cooked through, about 6-7 minutes per side. Remove and set aside.
  3. In the same skillet, melt butter and sauté minced garlic until fragrant, about 1 minute.
  4. Add cooked rice to the skillet and stir to coat with garlic butter. Cook for 2-3 minutes.
  5. Stir in heavy cream and parmesan cheese until well combined and creamy.
  6. Slice cooked chicken and serve over the garlic parmesan rice. Garnish with fresh parsley.
