For the Crust:

  • 2 cups cooked chicken, shredded
  • 1 cup cooked ham, diced
  • 1/2 cup Swiss cheese, shredded
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup all-purpose flour
  • 1/4 cup unsalted butter
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Melt butter in a large pot over medium heat. Add onion and garlic, sauté until softened.
  2. Whisk in flour to create a roux, cooking for 1-2 minutes until golden.
  3. Gradually pour in chicken broth, whisking continuously to avoid lumps.
  4. Add shredded chicken, diced ham, and thyme. Simmer for 15 minutes.
  5. Stir in heavy cream and Swiss cheese until cheese is melted and soup is creamy.
  6. Season with salt and pepper to taste. Serve hot.
