Cherry Lemon Cheesecake

A creamy and tangy cheesecake with a sweet cherry topping and a hint of lemon.

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tbsp unsalted butter, melted
  • 24 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1/4 cup fresh lemon juice
  • 1 tsp vanilla extract
  • 1 cup cherry pie filling

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F (165°C).
  2. Mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into the bottom of a 9-inch springform pan.
  3. Beat cream cheese and 3/4 cup sugar until smooth. Add eggs one at a time, then mix in lemon juice and vanilla.
  4. Pour filling over crust. Bake for 45-50 minutes until center is set.
  5. Cool completely, then refrigerate for at least 4 hours.
  6. Top with cherry pie filling before serving.
