Cheesy Sweet Onion Beef & Rice Casserole

A comforting and flavorful casserole with ground beef, sweet onions, rice, and melted cheese.

For the Crust:

  • 1 lb ground beef
  • 1 large sweet onion, diced
  • 1 cup uncooked white rice
  • 2 cups beef broth
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add diced sweet onion and sauté until softened, about 5 minutes.
  3. Add ground beef to the skillet and cook until browned, breaking it apart with a spoon as it cooks. Drain excess fat.
  4. Stir in uncooked rice, beef broth, garlic powder, onion powder, salt, and black pepper. Bring to a simmer.
  5. Transfer the mixture to a greased 9×13-inch baking dish. Cover with foil and bake for 25 minutes.
  6. Remove foil, sprinkle cheddar and mozzarella cheese on top, and bake uncovered for an additional 5 minutes or until cheese is melted and bubbly.
