For the Crust:
- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1 egg
- 1/4 cup milk
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup shredded cheddar cheese
- 1/4 cup ketchup
- 1 tbsp brown sugar
- 1 tsp mustard
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Grease a mini muffin tin.
- In a large bowl, mix ground beef, breadcrumbs, egg, milk, garlic powder, onion powder, salt, and pepper until well combined.
- Divide the mixture into 24 portions. Press each portion into the muffin tin, creating a small well in the center.
- Fill each well with shredded cheddar cheese, then top with another small portion of the meat mixture to seal.
- In a small bowl, mix ketchup, brown sugar, and mustard. Brush this glaze over the top of each meatloaf bite.
- Bake for 20-25 minutes until cooked through. Let cool slightly before serving.
