Cheesy Jalapeño Bacon Stuffed Meatloaf

A flavorful meatloaf stuffed with cheese, jalapeños, and bacon for a spicy, smoky twist on a classic dish.

For the Crust:

  • 1.5 lbs ground beef
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1/4 cup milk
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 4 oz cheddar cheese, cubed
  • 2 jalapeños, diced
  • 6 slices bacon, cooked and crumbled
  • 1/4 cup ketchup
  • 1 tbsp brown sugar
  • 1 tsp mustard

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a large bowl, mix ground beef, breadcrumbs, egg, milk, garlic powder, onion powder, salt, and pepper until well combined.
  3. Divide the meat mixture in half. Press one half into a flat rectangle on the prepared baking sheet.
  4. Sprinkle cheese cubes, diced jalapeños, and crumbled bacon evenly over the meat layer.
  5. Top with the remaining meat mixture, sealing the edges to enclose the filling.
  6. In a small bowl, mix ketchup, brown sugar, and mustard. Spread over the top of the meatloaf.
  7. Bake for 45-50 minutes or until the internal temperature reaches 160°F (71°C). Let rest for 10 minutes before slicing.
