Cheesy Cream Cheese Corn Casserole

For the Crust:

  • 4 cups corn kernels (fresh, frozen, or canned)
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, melted
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • 1/4 cup breadcrumbs (optional for topping)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large bowl, mix together the corn, cream cheese, melted butter, sour cream, cheddar cheese, Parmesan cheese, garlic powder, onion powder, salt, and pepper until well combined.
  3. Transfer the mixture to the prepared baking dish and spread evenly.
  4. Sprinkle breadcrumbs on top if desired for a crispy topping.
  5. Bake for 25-30 minutes or until bubbly and golden brown on top.
  6. Let cool slightly before serving.
