Cheesy Baked Zucchini Rounds

Crispy baked zucchini rounds topped with melted cheese and herbs.

For the Crust:

  • 2 medium zucchinis, sliced into 1/4-inch rounds
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Arrange zucchini rounds on the baking sheet. Brush lightly with olive oil and sprinkle with garlic powder, oregano, salt, and pepper.
  3. Top each zucchini round with mozzarella and Parmesan cheese. Bake for 15-20 minutes until cheese is melted and golden.
