A spicy twist on classic mac and cheese with roasted cauliflower, buffalo sauce, and ranch seasoning.

For the Crust:
1 head cauliflower, cut into florets
8 oz elbow macaroni
2 cups shredded cheddar cheese
1/2 cup buffalo sauce
1/4 cup ranch dressing
1 tbsp ranch seasoning mix
1/2 cup milk
2 tbsp butter
1/4 cup breadcrumbs
1/4 cup grated parmesan cheese
Instructions
1. Prepare the Crust:
Preheat oven to 400°F. Toss cauliflower florets with 1 tbsp olive oil and roast for 20 minutes until tender.
Cook macaroni according to package directions. Drain and set aside.
In a saucepan, melt butter over medium heat. Stir in milk, buffalo sauce, ranch dressing, and ranch seasoning. Add cheddar cheese and stir until melted.
Combine cooked macaroni, roasted cauliflower, and cheese sauce in a baking dish. Mix well.
Top with breadcrumbs and parmesan cheese. Bake for 15 minutes until golden and bubbly.
