Brownie Bottom Cheesecake – Two Desserts in One!

For the Crust:

  • 1 box brownie mix (plus required ingredients listed on the box)
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Prepare brownie mix according to package instructions and spread evenly in a greased 9-inch springform pan.
  2. Bake brownie layer for 15 minutes, then remove from oven and let cool slightly.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla and sour cream.
  4. Pour cheesecake batter over the partially baked brownie layer. Smooth the top with a spatula.
  5. Bake for 30-35 minutes or until the cheesecake is set but still slightly jiggly in the center.
  6. Let cool completely, then refrigerate for at least 4 hours before serving.
