A sweet and savory glazed salmon served over aromatic garlic butter rice.

For the Crust:
4 salmon fillets (6 oz each)
1/4 cup brown sugar
2 tbsp bourbon
2 tbsp soy sauce
1 tbsp Dijon mustard
1 tsp garlic powder
1 cup long-grain white rice
2 cups water
2 tbsp butter
3 cloves garlic, minced
1/2 tsp salt
1/4 tsp black pepper
1 tbsp chopped parsley (for garnish)
Instructions
1. Prepare the Crust:
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a small bowl, whisk together brown sugar, bourbon, soy sauce, Dijon mustard, and garlic powder to make the glaze.
Place salmon fillets on the prepared baking sheet. Brush each fillet generously with the glaze.
Bake salmon for 12-15 minutes, or until cooked through and flaky.
Meanwhile, rinse rice under cold water until water runs clear. In a saucepan, melt butter over medium heat. Add minced garlic and sauté for 30 seconds until fragrant.
Add rice, water, salt, and pepper to the saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let sit covered for 5 minutes.
Fluff rice with a fork and serve alongside the glazed salmon. Garnish with chopped parsley.
