BBQ Ranch Chicken & Bacon Potato Casserole

A hearty and flavorful casserole combining tender chicken, crispy bacon, and potatoes with BBQ and ranch flavors.

For the Crust:

  • 4 cups diced potatoes
  • 2 cups cooked chicken, shredded
  • 6 slices bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1/2 cup BBQ sauce
  • 1/2 cup ranch dressing
  • 1/2 cup sour cream
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In a large bowl, mix together the diced potatoes, shredded chicken, and crumbled bacon.
  3. In a separate bowl, whisk together BBQ sauce, ranch dressing, sour cream, garlic powder, onion powder, paprika, salt, and pepper.
  4. Pour the sauce mixture over the potato mixture and stir until well combined.
  5. Transfer the mixture to the prepared baking dish and spread evenly.
  6. Sprinkle shredded cheddar cheese on top.
  7. Bake for 30 minutes or until the potatoes are tender and the cheese is bubbly and golden.
  8. Let cool for 5 minutes before serving.
