For the Crust:
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 3 ripe bananas, mashed
- 1 tsp vanilla extract
- 1/2 cup buttermilk
- 1 cup chopped pecans
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease and flour a 9-inch cake pan.
- In a medium bowl, whisk together flour, baking soda, and salt.
- In a large bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, then mix in mashed bananas and vanilla.
- Alternately add the flour mixture and buttermilk to the banana mixture, beginning and ending with flour. Fold in chopped pecans.
- Pour batter into prepared pan and bake for 30-35 minutes, or until a toothpick inserted comes out clean. Cool before serving.
