4 ripe Bosc or Anjou pears, halved and cored
1 cup mixed berries (raspberries, blueberries, blackberries)
1/4 cup honey, plus extra for drizzling
1/2 cup chopped walnuts, toasted
4 oz blue cheese, crumbled
1 tbsp unsalted butter, melted
1 tsp ground cinnamon
Juice of 1 lemon
Instructions
Preheat oven to 375°F (190°C). Place pear halves cut-side up in a baking dish, brush with melted butter, and sprinkle with cinnamon and lemon juice.
Bake for 20-25 minutes until pears are tender. Remove from oven and top each pear half with berries, a drizzle of honey, toasted walnuts, and crumbled blue cheese.
Return to oven for 5 minutes to warm toppings. Drizzle with additional honey and serve warm.
