Baked Jalapeño Popper Chicken Lasagna Rolls

A spicy twist on classic lasagna rolls, filled with creamy jalapeño popper chicken and cheese.

For the Crust:

  • 8 lasagna noodles, cooked al dente
  • 2 cups cooked chicken, shredded
  • 4 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup pickled jalapeños, chopped
  • 1/4 cup bacon bits
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 cup marinara sauce
  • 1/4 cup shredded mozzarella cheese

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  2. In a bowl, mix chicken, cream cheese, sour cream, cheddar cheese, jalapeños, bacon bits, garlic powder, and onion powder.
  3. Spread about 1/4 cup of the chicken mixture onto each lasagna noodle and roll tightly.
  4. Place rolls seam-side down in the baking dish. Top with marinara sauce and mozzarella cheese.
  5. Bake for 20-25 minutes until cheese is bubbly and golden.
