Baked Burrito Casserole

A delicious and easy-to-make casserole filled with burrito flavors, perfect for a family dinner.

For the Crust:

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup cooked rice
  • 1 cup shredded cheddar cheese
  • 1 cup salsa
  • 4 large flour tortillas
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, cook ground beef over medium heat until browned. Drain excess fat, then stir in taco seasoning and 1/4 cup water. Simmer for 5 minutes.
  3. In a large bowl, combine cooked beef, black beans, corn, rice, and 1/2 cup salsa. Mix well.
  4. Spread remaining salsa on the bottom of a 9×13-inch baking dish. Layer tortillas, beef mixture, and cheese, repeating until all ingredients are used, ending with cheese on top.
  5. Bake for 20-25 minutes, or until cheese is melted and bubbly.
  6. Serve topped with sour cream and fresh cilantro.
