For the Crust:
1 lb ground beef
1 packet taco seasoning
1 can (15 oz) black beans, drained and rinsed
1 cup corn kernels
1 cup cooked rice
1 cup shredded cheddar cheese
1 cup salsa
4 large flour tortillas
1/2 cup sour cream
1/4 cup chopped fresh cilantro
Instructions
1. Prepare the Crust:
Preheat oven to 375°F (190°C).
In a skillet, cook ground beef over medium heat until browned. Drain excess fat, then stir in taco seasoning and 1/4 cup water. Simmer for 5 minutes.
In a large bowl, combine cooked beef, black beans, corn, rice, and 1/2 cup salsa. Mix well.
Spread remaining salsa on the bottom of a 9×13-inch baking dish. Layer tortillas, beef mixture, and cheese, repeating until all ingredients are used, ending with cheese on top.
Bake for 20-25 minutes, or until cheese is melted and bubbly.
