I'm Claire Monroe, and I started The Cooking Journal to keep track of the recipes my family actually asks for a second time. I cook the way most of us do — on weeknights, in a normal oven, with a few good pans and whatever the shop had that morning. Every recipe here gets cooked in my own kitchen before it gets written up, and anything that doesn't come out right the first time gets reworked until it does.
What interests me is the small stuff that decides whether a dish works: how dry the chicken needs to be before it meets the pan, why the garlic goes in last, when a shortcut is worth taking and when it quietly ruins dinner. So I write down the reasoning next to the measurements, because that's the part that makes a recipe repeatable.
