For the Crust:

  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 2 cups diced apples
  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • 1/2 cup rolled oats
  • 1/4 cup flour
  • 1/4 cup cold butter, cubed

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F. Mix graham cracker crumbs and melted butter, then press into a 9-inch springform pan.
  2. Beat cream cheese and granulated sugar until smooth. Add eggs one at a time, then stir in vanilla. Pour over crust.
  3. Toss apples with brown sugar and cinnamon. Spoon over cheesecake batter.
  4. Combine oats, flour, and cold butter to make a crumble topping. Sprinkle over apples.
  5. Bake for 50-60 minutes until set. Cool completely before serving.
